Simple Tomato Sauce
Preparation time 45 minutes
Ingredients
1lb tomatoes, fresh or canned
6 cloves garlic, peeled and quartered
½ olive oil
Kosher salt & ground pepper
Fresh basil
2tbs cornstarch
Water
Method
If using fresh tomatoes clean and remove the stems then roughly chop. In a large sauce pan, heat olive oil and roast the garlic until slightly brown. Carefully add the tomatoes to the pan, and add about ½ cup of water. Season to taste with salt and pepper. Bring to a boil and simmer until the garlic is completely cooked (approximately 15minutes). Add the fresh basil to the hot sauce and let steep for 5 minutes. If desired thicken the sauce with cornstarch slurry and cook for another 3 min. Ready to serve.
